This research is looking at how different kinds of wheat bread affect people who think they might have trouble eating wheat. Some people have a condition called non-celiac wheat sensitivity (NCWS), which means they feel sick after eating wheat, but they don't have celiac disease or a wheat allergy. Scientists want to find out if different ways of making bread change how people with NCWS react. They will give participants five types of bread, including special breads without gluten.
