Non-celiac gluten/wheat sensitivity (NCGS/NCWS) is a condition where people feel sick after eating gluten or wheat, even though they don't have celiac disease or a wheat allergy. Symptoms can include stomach trouble like irritable bowel syndrome (IBS), headaches, feeling like your mind is "foggy," and other issues like skin rashes or joint pain. These symptoms usually go away on a gluten-free diet (GFD) and can quickly return if gluten is eaten again. A new test can check for gluten pieces, called gluten immunogenic peptides (GIP), in urine or stool. This test helps see if someone on a GFD accidentally eats gluten. The study aims to see if GFD is followed correctly and how it relates to symptoms and GIP in urine.
